Boozy passionfruit mojito popsicles

Why should kids have all the fun? Why can’t us grown ups have a nice icy treat to get us through the hot summer days. A nice icy treat that includes alcohol.

I’ve been on a real frozen blitz lately to combat the heat. First were the traffic light popsicles, followed by the s’mores ice cream, and I’ve got a delicious coffee ice cream pie coming soon. I’ve also been having the odd mojito (and by odd, I mean several), which is my new favourite drink. I recently went to a bar and the waitress convinced me to try their passionfruit mojito and I was sold. Then my generous friend Liz offered me some passionfruit from her vines so obviously I had to try my own version, and here we are. Passionfruit mojito popsicles – boozy, icy, super refreshing, and guaranteed to make these hot summer days a little easier.

(Don’t forget to make sure these are stored separately from the kids ones!)

Ingredients (makes 8 popsicles)

½c sugar
1c water
¼c mint leaves, packed tightly
8-10 passionfruit
1/3c lime juice
1c Bacardi
soda water


Place the sugar and water in a small saucepan and bring to the boil over a medium heat. Cook until the sugar is completely dissolved (this won’t take long) then remove from the heat, stir in the mint leaves and cover. Let it cool to room temperature.
Strain the mint leaves and transfer the syrup to a medium size jug (or anything with a spout.)
Cut the passionfruit and scoop the flesh into a sieve placed over a bowl. Push it through to catch the juice. You should end up with around half a cup. Reserve some of the seeds.
Add the passionfruit juice, lime juice and Bacardi to the mint syrup and whisk until combined.
Pour into the popsicle molds, filling them ¾ full, then top them up with soda water. If you’d like, you can add a few passionfruit seeds to each popsicle (they’re edible.)

Freeze for at least 6 hours. At about the 2 hour mark, I insert the popsicle sticks. The mixture should be firm enough so they stand up straight.

To remove the popsicles from the molds, run them under warm water for about 20 seconds. Store, covered, in the freezer.



  • These are pretty strong. If you’d like to make them a bit less potent, only fill the molds halfway before finishing off with soda water. You’ll also be able to make more this way.
  • I know passionfruit is really expensive (it’s about $50kg at the moment. WTF.) You could choose another fruit or use this passionfruit powder
